Which salmon species are known for their distinctive hooked jaws? Sockeye salmon, scientifically known as Oncorhynchus nerka, exhibit unique characteristics throughout their lifecycle. Typically, these salmon have a bright orange flesh, with a white belly and a metallic blue-green top for most of their lives. However, as they approach the end of their life cycle, particularly during the spawning season, their bodies undergo a remarkable transformation.
